  • 1 large egg
  • 0.5 cup vegetable oil
  • 0.5 cup sour cream
  • 1 teaspoon vanilla extract
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar
  • 1.5 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1.5 cups freshly grated zucchini blotted, fairly firmly packed
  • 1 cups semi-sweet chocolate chips optional, but recommended

Method
 

Preparation Steps
  1. Preheat oven to 350F. Spray a 9x5-inch loaf pan with cooking spray or grease and flour it. Set aside.
  2. In a large bowl, whisk together egg, oil, sour cream, vanilla, granulated sugar, and brown sugar until smooth.
  3. Add flour, cinnamon, baking soda, baking powder, and salt. Stir gently to combine, do not overmix.
  4. Fold in grated zucchini and chocolate chips gently until evenly distributed.
  5. Pour batter into the prepared loaf pan. Sprinkle remaining chocolate chips on top.
  6. Bake for about 50 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil if top browns too quickly.
  7. Let the bread cool in the pan for 30 minutes. Then, remove and cool completely on a wire rack.

Notes

Use freshly grated zucchini for best results. Can be stored at room temperature for up to 2 days or refrigerated for up to 1 week.
